With summer coming to an end, I've really been itching to get back in the kitchen to do some baking. Having a little one around gives me another reason to want to make fresh, homemade goodies just like my mom used to when I was little.
I haven't found a decent oatmeal muffin recipe until now! These ones are soft and very flavourful. The original recipe is from www.allrecipes.com but I've made some small changes to make it perfect.
INGREDIENTS:
*makes 12 muffins
- 2 eggs
- 2/3 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 cup all purpose flour
- 3/4 cup quick cook oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon**
- 1 tbsp vanilla**
**You can omit these ingredients if you wish. You could also use this as a base recipe and mix it up by adding chocolate chips, raisins, etc.
DIRECTIONS:
1. Preheat oven to 400 degrees F.
2. Grease 12 muffin cups.
3. Whisk eggs, brown sugar, vanilla, vegetable oil and milk together until smooth.
4. Stir flour, oats, baking powder, baking soda and cinnamon into the wet ingredients. Fill prepared muffin cups with batter (3/4 full).
5. Bake in preheated oven until tops are golden brown and an inserted toothpick comes out clean, about 20 mins. If you over cook, they will be dry so keep an eye on the time!
